The Santoku is a general-purpose kitchen knife similar to the chef knife. The blade of the Santoku is not as curved as a chef’s knife, resulting in more of a chopping motion instead of a rocking motion. It performs extremely well at slicing, dicing, and mincing.
A Kullenschliff (K) edge, also known as a Granton- or Hollow-Edge, is designed to create an air pocket between the food and the blade, helping to prevent sticking.
What is a Santoku knife?
Constructed from superior 12C27 High-Carbon, High-Chromium Swedish Steel, our full-tang Vintage blades are cut, ground, polished and sharpened in our Massachusetts facilities. Handles of Walnut or NOIR (POM) are assembled to the blades with brass or stainless-steel rivets and then the knives are meticulously finished and sharpened.
The Vintage Series features an updated ergonomically friendly hand-finished Walnut handles that have a traditional, timeless look and feel. The sleek integrated bolster allows for a traditional or pinch-grip. The brass rivets complement the Walnut handle and accents the stainless-steel blade.
